Cheese balls
Ingredients (for 60 pieces):
120 g of butter
160 g of flour
100 g finely grated parmesan
100 g finely grated semi-hard cheese
4 eggs
salt to taste
400 ml vegetable oil for deep frying
Preparation:
1. Put oil, salt and pepper in a saucepan. Pour in 250 ml of water. We put it on the fire and keep it until the butter melts. Remove from the heat and stir in the flour. Return to the burner and keep on fire, stirring constantly, until the dough becomes homogeneous and begins to lag behind the sides of the pan. Remove from the stove.
2. Put the dough in a bowl, add the cheese and mix well.
3. Add the eggs to the dough one at a time, mixing thoroughly after each.
4. Put the dough in the refrigerator for 30 minutes. Separate 1 tsp from the cooled dough and form balls. We put it on a parchment-lined surface.
5. In a deep bowl, heat the vegetable oil over medium heat. In 4-5 batches, fry the cheese balls until tender and golden brown, 3-5 minutes per batch. We serve immediately.
