Fluffy flatbreads on kefir: delicious and fast

My grandmother often spoiled me with such lush tortillas, baked them every week. It was so hard to wait for them to cool down even a little… Now I'm cooking these tortillas for my family, which they are incredibly happy about!

Ingredients for the dough:

— 500 ml of kefir of any fat

content — 1 tsp baking soda

— 1 egg

— 2 tbsp vegetable oil

— 500-550 g of flour

— 50 g of butter

— salt to taste

Ingredients for the filling (to choose from):

— sausages or ham with cheese

— stewed mushrooms

— stewed cabbage

— mashed potatoes

— cottage cheese with herbs

Preparation:

Mix kefir with baking soda (you can not extinguish it). Add the egg and vegetable oil.

Sift the flour and add it to the liquid. Knead a soft dough (if necessary, add a little more flour. It is acceptable that the dough may slightly stick to your hands. Sprinkle with flour and, covered with a towel, leave to melt for 10 minutes.

Roll the dough for tortillas into a bundle and cut into 8-9 pieces. Roll out the pieces, lightly sprinkled with flour, into cakes the thickness of a little finger. Place the pre-prepared filling in the center, pinch the edges, press and smooth a little with your hand. Leave it on again for 2-3 minutes.

While the tortillas are resting, preheat the pan by sprinkling it lightly with vegetable oil. Then fry the tortillas on both sides under the lid.

Melt the butter. Brush each finished tortilla with butter on top, you can sprinkle with salt. Fold into a stack, cover with a towel or a bag and leave for 10-15 minutes.

Extremely appetizing, delicious and fluffy tortillas: they are literally bursting in a frying pan under the lid! By the way, this yummy can be cooked without filling and even made sweet: you just need to add a couple of tablespoons of sugar to the dough or sprinkle them on ready-made tortillas.
